I have a "level" system for peacefulness based on the number of fingers I raise up:
1-2 fingers means anarchy and almost everyone in the class is talking.
3 fingers means most of the kids are talking
4 fingers means a couple of people are talking
5 fingers means I can talk and you can learn best

So.....lets say a class is particularly loud....I simply raise 3 fingers and say calmly...."level 3 means a lot of people are talking". As they start to calm down I'll go to "level 4 means a couple people are talking"...."Level 5 means I can talk and you can learn.....thank you". It may take a few weeks but you will eventually just be able to raise your fingers without saying a word. If the class is particularly difficult, you could have a stopwatch and keep track of how long it took them to get to level 5. Post it on the board and challange them to beat their record each time.

I work with preschoolers and to get their attention I do several things, turn off the lights and raise my hand, use a spotlight, play sound effects, sing a song,
